Ingredients

  • 6 slices center cut bacon
  • 1½ lb boneless, skinless chicken thighs, cubed
  • 1 tsp Cajun seasoning
  • 3 green onions, thinly sliced

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Remove bacon, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  2. Sprinkle chicken with seasoning. Cook in drippings 5 to 6 minutes per side or until done. Sprinkle with bacon and onions. Serve over Tomato and Bell Pepper Rice recipe, if desired.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 2 yellow bell peppers, chopped
  • 3 cloves garlic, minced
  • ½ tsp salt
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can diced tomatoes (see Note)

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook bell peppers, garlic, and salt in hot oil in a large skillet over medium-high heat 6 minutes or until browned and tender. Stir in tomatoes and rice; cook 3 minutes or until thoroughly heated.
