Cajun Bacon Chicken
Tomato and Bell Pepper RiceWine Recommendation

Ingredients
- 6 slices center cut bacon
- 1½ lb boneless, skinless chicken thighs, cubed
- 1 tsp Cajun seasoning
- 3 green onions, thinly sliced
Instructions
- Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Remove bacon, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Sprinkle chicken with seasoning. Cook in drippings 5 to 6 minutes per side or until done. Sprinkle with bacon and onions. Serve over Tomato and Bell Pepper Rice recipe, if desired.
Side Dish Ingredients
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 2 yellow bell peppers, chopped
- 3 cloves garlic, minced
- ½ tsp salt
- 2 Tbsp olive oil
- 1 (14.5-oz) can diced tomatoes (see Note)
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook bell peppers, garlic, and salt in hot oil in a large skillet over medium-high heat 6 minutes or until browned and tender. Stir in tomatoes and rice; cook 3 minutes or until thoroughly heated.
