Lemon-Dill Asparagus Penne

Ingredients
- ½ (16-oz) pkg penne pasta
- ½ lb asparagus, trimmed and cut into 2-inch pieces
- ½ cup crumbled feta cheese
- 1½ Tbsp lemon juice
- 1½ Tbsp olive oil
- 1 Tbsp chopped fresh dill
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (7-oz) pkg lightly seasoned shredded jackfruit
- ¼ cup thinly sliced red onion
Instructions
- Cook pasta according to package directions, adding asparagus during last 3 minutes of cooking. Drain and plunge into ice-cold water. Let stand 1 to 2 minutes or until cool. Drain.
- Combine cheese, juice, oil, dill, salt, and pepper. Combine pasta, asparagus, jackfruit, and onion. Drizzle with cheese mixture; toss. Serve immediately, or chill up to 1 day.
