Ingredients

  • ½ (16-oz) pkg penne pasta 
  • ½ lb asparagus, trimmed and cut into 2-inch pieces
  • ½ cup crumbled feta cheese
  • 1½ Tbsp lemon juice
  • 1½ Tbsp olive oil
  • 1 Tbsp chopped fresh dill
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ (7-oz) pkg lightly seasoned shredded jackfruit
  • ¼ cup thinly sliced red onion

Instructions

  1. Cook pasta according to package directions, adding asparagus during last 3 minutes of cooking. Drain and plunge into ice-cold water. Let stand 1 to 2 minutes or until cool. Drain.
  2. Combine cheese, juice, oil, dill, salt, and pepper. Combine pasta, asparagus, jackfruit, and onion. Drizzle with cheese mixture; toss. Serve immediately, or chill up to 1 day.
