Ingredients

  • 1 green bell pepper, chopped
  • 1 (16-oz) pkg sliced mushrooms
  • 30 slices turkey pepperoni, quartered (about 2 oz)
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • ½ tsp salt
  • 12 large eggs
  • 1 cup pasta sauce
  • 1 (8-oz) block mozzarella cheese, shredded

Instructions

  1. Preheat oven to 425°F. Sauté bell pepper, mushrooms, and pepperoni in hot oil in a large ovenproof skillet over medium heat 5 minutes. Add garlic; cook 1 minute. Stir in oregano and salt.
  2. Whisk eggs in a bowl; add to vegetables in skillet. Cook 2 to 3 minutes, stirring often. Once small curds form, add pasta sauce and sprinkle with cheese; do not stir.
  3. Transfer skillet to oven. Bake 15 minutes or until center is set.

  • 2 (12-oz) pkg frozen green beans
  • 3 Tbsp olive oil
  • 1½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Roast 12 to 15 minutes or until beans are tender and browned.
