Pizza Frittata
Roasted Green Beans
Ingredients
- 1 green bell pepper, chopped
- 1 (16-oz) pkg sliced mushrooms
- 30 slices turkey pepperoni, quartered (about 2 oz)
- 2 Tbsp olive oil
- 4 cloves garlic, minced
- 2 tsp dried oregano
- ½ tsp salt
- 12 large eggs
- 1 cup pasta sauce
- 1 (8-oz) block mozzarella cheese, shredded
Instructions
- Preheat oven to 425°F. Sauté bell pepper, mushrooms, and pepperoni in hot oil in a large ovenproof skillet over medium heat 5 minutes. Add garlic; cook 1 minute. Stir in oregano and salt.
- Whisk eggs in a bowl; add to vegetables in skillet. Cook 2 to 3 minutes, stirring often. Once small curds form, add pasta sauce and sprinkle with cheese; do not stir.
- Transfer skillet to oven. Bake 15 minutes or until center is set.

- 3 Tbsp olive oil
- 1½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Roast 12 to 15 minutes or until beans are tender and browned.
