Ingredients

  • 1 (10-oz) pkg shredded carrots
  • 1 onion, diced
  • 3 Tbsp olive oil
  • 3 cups shredded rotisserie chicken
  • ¼ cup low-sodium soy sauce
  • 3 Tbsp sweet chili sauce
  • 3 Tbsp minced garlic
  • ¼ tsp ground ginger
  • ¾ cup chopped peanuts
  • 1 head butter lettuce (or use green leaf or Bibb)
  • 3 green onions, thinly sliced

Instructions

  1. Cook carrots and onion in hot oil in a large skillet over medium-high heat 5 minutes.
  2. Reduce heat to medium; add chicken, soy sauce, chili sauce, garlic, and ginger, stirring to coat. Cook until sauce is thickened and mixture is thoroughly heated. Remove from heat; stir in nuts.
  3. Separate lettuce into leaves. Divide chicken mixture among leaves; sprinkle with green onions.

  • 2 (20-oz) cans pineapple chunks in juice

  1. Serve pineapple with wraps.
