Thai Chicken Lettuce Wraps

Ingredients
- 1 (10-oz) pkg shredded carrots
- 1 onion, diced
- 3 Tbsp olive oil
- 3 cups shredded rotisserie chicken
- ¼ cup low-sodium soy sauce
- 3 Tbsp sweet chili sauce
- 3 Tbsp minced garlic
- ¼ tsp ground ginger
- ¾ cup chopped peanuts
- 1 head butter lettuce (or use green leaf or Bibb)
- 3 green onions, thinly sliced
Instructions
- Cook carrots and onion in hot oil in a large skillet over medium-high heat 5 minutes.
- Reduce heat to medium; add chicken, soy sauce, chili sauce, garlic, and ginger, stirring to coat. Cook until sauce is thickened and mixture is thoroughly heated. Remove from heat; stir in nuts.
- Separate lettuce into leaves. Divide chicken mixture among leaves; sprinkle with green onions.

- 2 (20-oz) cans pineapple chunks in juice

- Serve pineapple with wraps.
