Garlic-Parsley Sautéed Shrimp

Ingredients

  • 1 lb peeled and deveined, large raw shrimp
  • ⅛ tsp salt
  • ⅛ tsp pepper 
  • 1½ Tbsp olive oil
  • 1 Tbsp butter
  • 3 cloves garlic, minced
  • 3 Tbsp finely chopped fresh parsley

Instructions

  1. Pat shrimp dry; sprinkle with salt and pepper. Cook in hot oil in a skillet over medium-high heat 2 to 3 minutes per side or until shrimp turn pink.
  2. Stir in butter, garlic, and parsley; cook 2 minutes or until garlic is fragrant and butter melts. Serve over Sautéed Zoodles recipe.

Side Dish Ingredients

  • 1 (16-oz) pkg zucchini noodles
  • 1½ Tbsp olive oil
  • ½ (9-oz) pkg chopped romaine lettuce
  • 3 Tbsp freshly grated Parmesan cheese
  • ¼ cup Caesar dressing

Side Dish Instructions

  1. Cook zucchini in hot oil in a large skillet over medium-high heat, stirring often, 2 to 3 minutes or just until thoroughly heated.
  2. Toss together lettuce, cheese, and dressing in a bowl.
