Sweet and Sour Pineapple-Vegetable Stir-Fry

Ingredients

  • 1 (20-oz) pkg frozen bell pepper and onion blend
  • 1 (12-oz) pkg frozen shelled edamame
  • 1 (12-oz) pkg frozen broccoli florets
  • 4 Tbsp olive oil, divided
  • 1 (20-oz) can pineapple chunks in juice, drained
  • 1 (12-oz) bottle sweet and sour sauce
  • ¾ cup roasted, lightly salted peanuts
  • 3 green onions, thinly sliced

Instructions

  1. Cook bell peppers and onion, edamame, and broccoli in 3 Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender.
  2. Meanwhile, cook pineapple in 1 Tbsp hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned.
  3. Add pineapple, sweet and sour sauce, and nuts to skillet with vegetables; reduce heat to medium, and cook 2 minutes or until thoroughly heated, stirring to coat.
  4. Serve over brown rice; sprinkle with onions.
