Minestrone Soup

Ingredients

  • 1 onion, chopped
  • 4 carrots, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • ¼ cup tomato paste
  • ½ tsp crushed red pepper
  • 2 (32-oz) cartons low-sodium chicken broth
  • 1 (28-oz) can diced tomatoes with Italian seasoning
  • 2 (15-oz) cans cannellini beans, drained and rinsed
  • ½ (16-oz) pkg ditalini pasta
  • 1 (10-oz) pkg spinach
  • 2 tsp red wine vinegar

Instructions

  1. Cook onion, carrots, celery, and garlic in hot oil in a large Dutch oven over medium heat 5 minutes. Add tomato paste and red pepper. Cook, stirring constantly, 2 minutes.
  2. Stir in broth, diced tomatoes, and beans. Bring to a boil; stir in pasta. Reduce heat, and simmer 10 minutes or until pasta is tender. Gradually add spinach, stirring until wilted. Add vinegar.

  1. Bake rolls according to package directions.
