One-Pot Chili Mac and Cheese

Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (15-oz) can crushed tomatoes
  • 1 (15-oz) can no-salt-added kidney beans, rinsed and drained
  • 1 (1-oz) envelope low-sodium taco seasoning mix
  • 12 oz elbow macaroni
  • 1 (8-oz) pkg shredded Cheddar cheese

Instructions

  1. Cook beef and onion in a large, deep skillet over medium heat until beef is browned and crumbly. Drain, and return to skillet.
  2. Stir in broth, tomatoes, beans, seasoning mix, and macaroni.
  3. Bring to a boil; reduce heat, cover and simmer 8 to 10 minutes or until pasta is tender.
  4. Stir in 1 cup cheese. Sprinkle remaining cheese over pasta.
