Skillet Chicken and Broccoli

Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ¾ cup low-sodium chicken broth
  • ¾ cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup grated Parmesan cheese

Instructions

  1. Cook broccoli according to package directions.
  2. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with salt and pepper, if desired.
  3. Cook chicken in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned.
  4. Reduce heat to medium; add broth, cream, garlic powder, and seasoning. Cook 10 minutes or until thickened.
  5. Stir in cheese until melted. Add broccoli, toss.
