Skillet Sausage with White Beans and Spinach

Ingredients

  • 1 (14-oz) pkg smoked sausage, cut into 1-inch pieces
  • 1¾ cups low-sodium chicken broth
  • 2 (15-oz) cans no-salt-added cannellini beans, drained and rinsed
  • 1 (14.5-oz) can diced tomatoes with Italian seasonings
  • 1 tsp garlic powder
  • 1 (10-oz) pkg spinach, chopped
  • 2 (8.8-oz) pouches microwavable long-grain white rice

Instructions

  1. Cook sausage in a large nonstick skillet over medium-high heat until browned. Stir in broth, beans, tomatoes, and garlic powder; bring to a boil, reduce heat, and simmer 10 minutes.
  2. Gradually stir in spinach until wilted.
  3. Meanwhile, heat rice according to package directions. Serve sausage mixture over rice.
