Classic Reuben Bowls
Ingredients
- ½ onion, thinly sliced
- 2 Tbsp olive oil
- 1 head green cabbage, shredded
- 1 lb thinly sliced roast beef
- 1 (8-oz) pkg sliced Swiss cheese, chopped
- 1 cup dill pickle chips
- 1 cup Russian dressing
- 1 (5-oz) pkg rye croutons
Instructions
- Cook onion in hot oil in a large, deep skillet over medium heat until tender. Gradually add cabbage, cook until crisp-tender, stirring frequently. Season with salt and pepper, if desired.
- Divide cabbage mixture among 6 shallow bowls. Top with roast beef, cheese, and pickles; drizzle with dressing, and sprinkle with croutons.
