Classic Reuben Bowls

Ingredients

  • ½ onion, thinly sliced
  • 2 Tbsp olive oil
  • 1 head green cabbage, shredded
  • 1 lb thinly sliced roast beef
  • 1 (8-oz) pkg sliced Swiss cheese, chopped
  • 1 cup dill pickle chips
  • 1 cup Russian dressing
  • 1 (5-oz) pkg rye croutons

Instructions

  1. Cook onion in hot oil in a large, deep skillet over medium heat until tender. Gradually add cabbage, cook until crisp-tender, stirring frequently. Season with salt and pepper, if desired.
  2. Divide cabbage mixture among 6 shallow bowls. Top with roast beef, cheese, and pickles; drizzle with dressing, and sprinkle with croutons.
