Greek Chicken Bowls

Ingredients
- 2 (12-oz) pkg frozen cauliflower rice
- 5 Tbsp olive oil, divided
- ½ tsp garlic salt
- 4 cups shredded rotisserie chicken
- 1 English cucumber, halved lengthwise and sliced
- 1½ cups grape tomatoes, halved
- ½ cup crumbled feta cheese
- 12 pitted kalamata olives
- 2 tsp Greek seasoning
Instructions
- Cook cauliflower rice according to package directions.
- Combine cauliflower rice with 1 Tbsp oil and garlic salt in a bowl. Divide among 6 shallow bowls.
- Top cauliflower rice with chicken, cucumber, tomatoes, cheese, and olives.
- Whisk together 4 Tbsp oil and Greek seasoning. Drizzle flavored oil over bowls.
