Greek Chicken Bowls

Ingredients

  • 2 (12-oz) pkg frozen cauliflower rice
  • 5 Tbsp olive oil, divided
  • ½ tsp garlic salt
  • 4 cups shredded rotisserie chicken
  • 1 English cucumber, halved lengthwise and sliced
  • 1½ cups grape tomatoes, halved
  • ½ cup crumbled feta cheese
  • 12 pitted kalamata olives
  • 2 tsp Greek seasoning

Instructions

  1. Cook cauliflower rice according to package directions.
  2. Combine cauliflower rice with 1 Tbsp oil and garlic salt in a bowl. Divide among 6 shallow bowls.
  3. Top cauliflower rice with chicken, cucumber, tomatoes, cheese, and olives.
  4. Whisk together 4 Tbsp oil and Greek seasoning. Drizzle flavored oil over bowls.
