Ingredients

  • 1½ cups shredded Cheddar cheese
  • ⅓ cup mayonnaise
  • 1 Tbsp Ranch dressing mix
  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch strips
  • 2 Tbsp olive oil

Instructions

  1. Combine cheese, mayonnaise, and Ranch mix in a bowl.
  2. Cook chicken, in two batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 6 minutes. Return all chicken to skillet, and top with cheese mixture. Cook 6 minutes until chicken is done and cheese is melted.

  • 1 (16-oz) pkg frozen whole green beans
  • 1 tsp salt
  • ¼ cup slivered almonds
  • 2 Tbsp butter
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Cook green beans according to package directions; place in a bowl. Sprinkle with salt.
  2. Cook nuts in melted butter in a small skillet over medium heat until toasted.
  3. Stir in lemon juice; spoon over green beans.
