Buffalo Chicken Pasta

Ingredients
- 4 oz penne pasta
- ½ lb boneless, skinless chicken breasts, cubed
- 2 tsp olive oil
- ¼ cup Ranch dressing
- ⅓ cup crumbled blue cheese
- ¾ cup canned diced tomatoes, undrained
- ⅓ cup low-sodium chicken broth
- 3 Tbsp buffalo sauce
- 2 oz cream cheese, softened and cubed
- ⅛ tsp crushed red pepper
- 1 green onion, thinly sliced
Instructions
- Cook pasta according to package directions.
- Cook chicken in hot oil in a skillet over medium-high heat 6 to 8 minutes or until browned and done; remove from skillet. Stir together chicken, dressing, and blue cheese.
- Reduce heat to medium. Add tomatoes, broth, buffalo sauce, cream cheese, and red pepper to skillet; cook until thickened and creamy. Add pasta, tossing to coat in sauce. Stir in chicken mixture. Sprinkle with onion.
