Mojo Chicken Drumsticks
Easy Black Bean and Corn Salad
Ingredients
- 1½ lb chicken drumsticks
- ¼ tsp salt
- ½ cup fresh orange juice
- 3 Tbsp lime juice
- ½ tsp dried oregano
- ½ tsp ground cumin
- Dash of cayenne pepper
- 2 small cloves garlic, minced
Instructions
- Sprinkle chicken with salt, and place in a greased 3- or 4-quart slow cooker.
- Stir together orange juice and remaining ingredients. Pour over chicken.
- Cover and cook on LOW 6 to 7 hours or until chicken is done.

- 1 Tbsp lime juice
- 1 Tbsp olive oil
- ¼ tsp ground cumin
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (15-oz) can black beans, drained and rinsed
- ½ (15.25-oz) can corn with red and green peppers, drained
Side Dish Instructions
- Stir together lime juice, oil, cumin, salt, and pepper in a medium bowl. Add beans and corn; toss. Serve at room temperature or chilled.
