Cauliflower Steak Gratin

Ingredients

  • 1 large head cauliflower
  • 3 Tbsp olive oil
  • ½ kosher salt
  • ½ tsp pepper
  • 1 cup garlic-herb spreadable cheese
  • ¾ cup freshly grated Parmesan cheese
  • 6 Tbsp whole wheat panko breadcrumbs
  • ¼ cup chopped fresh parsley
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat oven to 450°F.  Cut cauliflower lengthwise into ¾-inch-thick slabs. (Some pieces will crumble); arrange in a single layer on a lightly greased large rimmed baking sheet.
  2. Brush both sides of cauliflower with oil; sprinkle with salt and pepper. Bake 15 to 18 minutes or until just tender.
  3. Turn cauliflower steaks; carefully spread with garlic-herb cheese. Sprinkle with Parmesan and breadcrumbs.
  4. Bake 10 minutes longer or until cauliflower steaks are golden and topping is hot and bubbly. Sprinkle with parsley and red pepper.

  • 12 oz spaghetti
  • 1 lemon
  • 1 (5-oz) pkg baby spinach
  • 1 Tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water, and return to pot. Grate zest and squeeze juice from lemon.
  2. Toss hot cooked pasta, reserved ½ pasta water, lemon zest, juice, spinach, oil, garlic, salt, and pepper over low heat until combined and spinach wilts.
