Ingredients

  • 3 small spaghetti squash, halved lengthwise (see Note)
  • 2 Tbsp olive oil
  • 2 cups canned crushed tomatoes
  • 1 Tbsp Italian seasoning
  • 2 tsp minced garlic
  • 1 tsp sugar
  • ½ tsp freshly ground pepper
  • 2 cups shredded rotisserie chicken
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
  • ½ cup freshly grated Parmesan cheese
  • 2 Tbsp butter
  • ¾ cup whole wheat panko breadcrumbs

Instructions

  1. Preheat oven to 425°F. Scrape out seeds from squash.
  2. Drizzle cut sides of squash with oil; sprinkle with salt, if desired. Place squash, cut sides down, in 2 large baking dishes coated with cooking spray. Bake 30 minutes or until tender when pierced with a fork.
  3. Meanwhile, bring tomatoes, Italian seasoning, garlic, sugar, and pepper to a simmer in a skillet over medium-high heat; reduce heat, and cook 5 minutes. Stir in chicken; cook 3 to 5 minutes or until thoroughly heated.
  4. Scrape spaghetti-like strands from squash using a fork. Toss with chicken mixture, and spoon into squash shells. Top with cheeses. Bake 10 minutes or until cheese is melted.
  5. Wipe skillet clean. Melt butter in skillet. Add breadcrumbs, and cook over medium-high heat, stirring, until toasted. Sprinkle over squash.

Side Dish Ingredients

  • 1 (5-oz) pkg spring mix
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic glaze (or use balsamic vinegar)
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1.  Toss together all ingredients in a large bowl.
