Chicken Parmesan Spaghetti Squash

Ingredients
- 3 small spaghetti squash, halved lengthwise (see Note)
- 2 Tbsp olive oil
- 2 cups canned crushed tomatoes
- 1 Tbsp Italian seasoning
- 2 tsp minced garlic
- 1 tsp sugar
- ½ tsp freshly ground pepper
- 2 cups shredded rotisserie chicken
- 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
- ½ cup freshly grated Parmesan cheese
- 2 Tbsp butter
- ¾ cup whole wheat panko breadcrumbs
Instructions
- Preheat oven to 425°F. Scrape out seeds from squash.
- Drizzle cut sides of squash with oil; sprinkle with salt, if desired. Place squash, cut sides down, in 2 large baking dishes coated with cooking spray. Bake 30 minutes or until tender when pierced with a fork.
- Meanwhile, bring tomatoes, Italian seasoning, garlic, sugar, and pepper to a simmer in a skillet over medium-high heat; reduce heat, and cook 5 minutes. Stir in chicken; cook 3 to 5 minutes or until thoroughly heated.
- Scrape spaghetti-like strands from squash using a fork. Toss with chicken mixture, and spoon into squash shells. Top with cheeses. Bake 10 minutes or until cheese is melted.
- Wipe skillet clean. Melt butter in skillet. Add breadcrumbs, and cook over medium-high heat, stirring, until toasted. Sprinkle over squash.

- 1 (5-oz) pkg spring mix
- 2 Tbsp olive oil
- 2 Tbsp balsamic glaze (or use balsamic vinegar)
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a large bowl.
