Chicken Parmesan Hoagie Sandwiches

Ingredients
- 2 cups Italian-style panko breadcrumbs
- ½ cup finely shredded Parmesan cheese
- 6 (4-oz) thin sliced boneless, skinless chicken breast fillets
- 2 eggs, lightly beaten
- ¼ cup olive oil
- 6 slices mozzarella cheese
- 6 hoagie rolls
- 1 (24-oz) jar pasta sauce or marinara sauce, heated
Instructions
- Preheat oven to 400°F. Combine breadcrumbs and Parmesan on a plate. Season chicken with salt and pepper, if desired. Dip in beaten egg; dredge in breadcrumb-cheese mixture, pressing to adhere.
- Cook chicken, in two batches, using 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 4 minutes per side or until done.
- Transfer chicken to a foil-lined baking sheet as each batch is done. Top with mozzarella.
- Add rolls to hot oven, cut sides up. Bake just until cheese is melted and rolls are toasted. Assemble sandwiches with pasta sauce and cheesy chicken.
