Buffalo Chicken Tacos

Ingredients

  • 1 cup shredded rotisserie chicken
  • ¼ cup buffalo sauce
  • 3 Tbsp mayonnaise
  • 2 Tbsp crumbled blue cheese
  • 4 soft taco-size flour tortillas
  • ⅓ cup shredded romaine lettuce
  • ⅓ cup shredded carrots
  • 3 Tbsp chopped fresh cilantro

Instructions

  1. Toss together chicken and buffalo sauce. Heat in microwave or a saucepan over medium heat until warm.
  2. Stir together mayonnaise and cheese, thinning with water, if needed, to reach a pourable consistency.
  3. Heat tortillas according to package directions. Divide chicken mixture, lettuce, carrots, and cilantro among tortillas. Drizzle with blue cheese sauce.
