Zucchini-Marinara Turkey Bake
Whole-Grain Bread with Garlicky Dipping Oil
Ingredients
- 4 zucchini, shredded
- ½ tsp kosher salt
- 2 large eggs, lightly beaten
- 2 cups shredded mozzarella cheese, divided
- ½ cup freshly grated Parmesan cheese
- 1 lb ground turkey
- 3 cloves garlic, minced
- ½ tsp pepper
- 1½ cups marinara sauce
- 1 tsp Italian seasoning
Instructions
- Preheat oven to 400°F. Place shredded zucchini in a strainer; sprinkle with salt, and drain 10 minutes. Squeeze zucchini dry using paper towels.
- Combine zucchini, eggs, ¾ cup mozzarella, and Parmesan. Press into a lightly greased 13- x 9-inch baking dish. Bake 20 minutes.
- Cook turkey, garlic, and pepper in a large skillet over medium-high heat until browned and crumbly. Add marinara sauce and Italian seasoning; cook 1 minute. Spoon over partially-baked zucchini. Top with 1¼ cups mozzarella.
- Bake 20 minutes or until browned and bubbly.

- ½ tsp crushed red pepper
- ½ (13-oz) loaf whole wheat French bread, heated
Side Dish Instructions
- Combine oil, garlic, Italian seasoning, and red pepper in a small bowl; serve with bread for dipping.
