Zucchini-Marinara Turkey Bake

Ingredients

  • 4 zucchini, shredded
  • ½ tsp kosher salt
  • 2 large eggs, lightly beaten
  • 2 cups shredded mozzarella cheese, divided
  • ½ cup freshly grated Parmesan cheese
  • 1 lb ground turkey
  • 3 cloves garlic, minced
  • ½ tsp pepper
  • 1½ cups marinara sauce
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 400°F. Place shredded zucchini in a strainer; sprinkle with salt, and drain 10 minutes. Squeeze zucchini dry using paper towels.
  2. Combine zucchini, eggs, ¾ cup mozzarella, and Parmesan. Press into a lightly greased 13- x 9-inch baking dish. Bake 20 minutes.
  3. Cook turkey, garlic, and pepper in a large skillet over medium-high heat until browned and crumbly. Add marinara sauce and Italian seasoning; cook 1 minute. Spoon over partially-baked zucchini. Top with 1¼ cups mozzarella.
  4. Bake 20 minutes or until browned and bubbly.

  • ½ tsp crushed red pepper
  • ½ (13-oz) loaf whole wheat French bread, heated

  1. Combine oil, garlic, Italian seasoning, and red pepper in a small bowl; serve with bread for dipping.
