Ingredients

  • 3 Tbsp butter
  • 1½ lb boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 cup chopped onion
  • 3 Tbsp all-purpose flour
  • 1 (15-oz) pkg frozen mixed vegetables
  • 2 cups low-sodium chicken broth
  • ½ cup milk
  • ½ tsp pepper
  • 1 (16.3-oz) can refrigerated flaky layer biscuits

Instructions

  1. Preheat oven to 375°F. Melt butter in a large ovenproof skillet over medium heat. Add chicken and onion; cook until chicken is browned. Add flour; cook, stirring, 2 minutes. Add vegetables, broth, milk, and pepper; cook until mixture is thickened.
  2. Meanwhile, split biscuits in half lengthwise. Cut each biscuit in half crosswise. Arrange biscuits over hot chicken mixture.
  3. Bake 20 to 22 minutes or until biscuits are golden brown.
