Ingredients
- 3 Tbsp butter
- 1½ lb boneless, skinless chicken thighs, cut into 1-inch chunks
- 1 cup chopped onion
- 3 Tbsp all-purpose flour
- 1 (15-oz) pkg frozen mixed vegetables
- 2 cups low-sodium chicken broth
- ½ cup milk
- ½ tsp pepper
- 1 (16.3-oz) can refrigerated flaky layer biscuits
Instructions
- Preheat oven to 375°F. Melt butter in a large ovenproof skillet over medium heat. Add chicken and onion; cook until chicken is browned. Add flour; cook, stirring, 2 minutes. Add vegetables, broth, milk, and pepper; cook until mixture is thickened.
- Meanwhile, split biscuits in half lengthwise. Cut each biscuit in half crosswise. Arrange biscuits over hot chicken mixture.
- Bake 20 to 22 minutes or until biscuits are golden brown.
