Mexican Sloppy Dogs

Tomato-Green Onion Coleslaw

Ingredients

  • 1 lb ground beef
  • ½ cup chopped onion
  • 1 (15-oz) can tomato sauce
  • 2 Tbsp Dijon mustard
  • 1 Tbsp chili powder
  • 6 Angus beef hot dogs
  • 6 hot dog buns, split
  • 1 (8-oz) block Cheddar cheese, shredded
  • ½ cup sour cream
  • 1 cup crushed tortilla chips

Instructions

  1. Cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Add tomato sauce, mustard, and chili powder. Bring to a boil, reduce heat, and simmer 5 minutes or until thickened.
  2. Cook hot dogs according to package directions.
  3. Preheat broiler. Place buns, cut sides up, on a baking sheet; broil until lightly toasted. Place hot dogs in buns. Top with beef mixture; sprinkle with cheese. Top with sour cream and chips.

  • ¼ cup olive oil
  • 3 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 1 (16-oz) pkg tricolor coleslaw
  • 1 pint grape tomatoes, halved
  • 4 green onions, finely chopped

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, and mustard in a large bowl. Add coleslaw, tomatoes, and onions; toss.
