Honey-Sesame Pork Tenderloin
Mixed Vegetables and Brown RiceIngredients
- 2 (1-lb) pork tenderloins, trimmed
- ½ tsp salt
- ½ tsp pepper
- ½ cup honey
- ¼ cup low-sodium soy sauce
- 3 Tbsp sesame seeds
- 2 Tbsp sesame oil
- 1 Tbsp minced garlic
Instructions
- Preheat oven to 425°F. Place pork on a greased rimmed baking sheet; sprinkle with salt and pepper. Bake 20 to 22 minutes or until a meat thermometer inserted reads 145°F. Let stand 3 minutes before slicing.
- Meanwhile, bring honey, soy sauce, sesame seeds, oil, and garlic to a boil in a saucepan; cook 7 minutes or until thickened. Serve sauce with pork.

- 2 (8.8-oz) pouches microwavable brown rice
- 1 (20-oz) pkg frozen sugar snap pea stir-fry vegetables (sugar snap peas, broccoli, green beans, yellow squash, red peppers, carrots, yellow peppers, and water chestnuts)
- 1 Tbsp olive oil
- 3 Tbsp low-sodium soy sauce
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook vegetables in hot oil in a large skillet over medium-high heat 7 to 10 minutes or until lightly browned and tender. Stir in soy sauce.
