Cajun Beef-Stuffed Bell Peppers

Ingredients

  • ½ (12-oz) pkg cauliflower florets
  • ½ lb grass-fed ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp almond flour
  • 2 Tbsp tomato paste
  • 1 Tbsp Cajun seasoning
  • ½ tsp salt
  • 2 large green bell peppers

Instructions

  1. Preheat oven to 350°F. Pulse cauliflower in a food processor until it resembles rice.
  2. Cook cauliflower, beef, onion, and garlic in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned and crumbly. Transfer to a bowl; stir in flour, tomato paste, Cajun seasoning, and salt.
  3. Cut tops off bell peppers; discard seeds and membranes. Stuff cauliflower mixture into bell peppers. Place stuffed peppers in a baking dish.
  4. Bake 30 minutes or until peppers are tender.

  • 2 cloves garlic, minced
  • ½ (16-oz) pkg chopped kale
  • 1 Tbsp red wine vinegar
  • ½ tsp salt
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Melt oil in a large skillet over medium heat. Add garlic; sauté 2 minutes. Add kale, vinegar, salt, and red pepper; cook 5 minutes or until kale is wilted.
