Cajun Beef-Stuffed Bell Peppers

Ingredients
- ½ (12-oz) pkg cauliflower florets
- ½ lb grass-fed ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 Tbsp almond flour
- 2 Tbsp tomato paste
- 1 Tbsp Cajun seasoning
- ½ tsp salt
- 2 large green bell peppers
Instructions
- Preheat oven to 350°F. Pulse cauliflower in a food processor until it resembles rice.
- Cook cauliflower, beef, onion, and garlic in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned and crumbly. Transfer to a bowl; stir in flour, tomato paste, Cajun seasoning, and salt.
- Cut tops off bell peppers; discard seeds and membranes. Stuff cauliflower mixture into bell peppers. Place stuffed peppers in a baking dish.
- Bake 30 minutes or until peppers are tender.

- ½ (16-oz) pkg chopped kale
- 1 Tbsp red wine vinegar
- ½ tsp salt
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Melt oil in a large skillet over medium heat. Add garlic; sauté 2 minutes. Add kale, vinegar, salt, and red pepper; cook 5 minutes or until kale is wilted.
