Ingredients

  • 2 lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 3 Tbsp butter
  • 2 shallots, thinly sliced
  • 3 green onions, thinly sliced
  • 2 Tbsp lemon juice

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken, in batches if necessary, in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  2. Meanwhile, melt butter in a large skillet over medium heat. Add shallots and green onions; cook 4 to 6 minutes or until tender and slightly charred. Stir in lemon juice. Serve butter mixture over chicken.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 2 (12-oz) pkg broccoli florets
  • 6 Tbsp butter
  • 2 tsp Italian seasoning

Side Dish Instructions

  1. Cook potatoes and broccoli separately according to package directions.
  2. Melt butter in microwave or in a small saucepan over medium heat. Stir in Italian seasoning. Toss butter mixture with broccoli.
