Green Onion-Shallot Chicken
Mashed Potatoes and Buttery BroccoliWine Recommendation

Ingredients
- 2 lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 3 Tbsp butter
- 2 shallots, thinly sliced
- 3 green onions, thinly sliced
- 2 Tbsp lemon juice
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken, in batches if necessary, in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Meanwhile, melt butter in a large skillet over medium heat. Add shallots and green onions; cook 4 to 6 minutes or until tender and slightly charred. Stir in lemon juice. Serve butter mixture over chicken.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 2 (12-oz) pkg broccoli florets
- 6 Tbsp butter
- 2 tsp Italian seasoning
Side Dish Instructions
- Cook potatoes and broccoli separately according to package directions.
- Melt butter in microwave or in a small saucepan over medium heat. Stir in Italian seasoning. Toss butter mixture with broccoli.
