Ingredients

  • 1 (8-oz) pkg chopped onion
  • 1 (8-oz) pkg sliced mushrooms
  • 1 large zucchini, chopped
  • 1 red bell pepper, chopped
  • 2 Tbsp jarred minced garlic
  • 2 Tbsp olive oil
  • 1½ lb ground beef
  • 1 (25-oz) jar spicy pasta sauce
  • 1 (0.5-oz) fresh basil, torn (optional)

Instructions

  1. Sauté first 5 ingredients in hot oil in a Dutch oven or large deep skillet over medium-high heat 8 to 10 minutes or until tender. Season with salt and pepper, if desired.
  2. Meanwhile, cook beef in another skillet over medium-high heat until browned and crumbly. Drain and add to vegetables. Add pasta sauce; simmer 5 minutes. Season again, if desired. Serve over pasta. Sprinkle with basil, if desired.
