Swedish Meatball Soup

Ingredients

  • ¼ cup butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 1 (32-oz) carton low-sodium beef broth
  • 1 lb small red potatoes, quartered
  • 1 (12-oz) pkg fully cooked Italian style meatballs with mozzarella cheese, halved
  • 1 (8-oz) carton heavy cream
  • 1 (12-oz) pkg frozen green peas
  • 2 Tbsp chopped fresh dill

Instructions

  1. Melt butter in a large Dutch oven over medium heat. Add onion, celery, and garlic; cook, stirring occasionally, until vegetables are tender.
  2. Add flour; cook, stirring constantly, 2 minutes. Gradually stir in broth. Add potatoes; bring to a boil, reduce heat, and simmer 10 minutes or until potatoes are tender.
  3. Stir in meatballs and cream; cook 5 minutes or until meatballs are thoroughly heated.
  4. Stir in peas, and cook 2 minutes. Stir in dill; season with salt and pepper, if desired.

Side Dish Ingredients

  • 6 soft dinner rolls
  • 3 Tbsp olive oil
  • 3 cloves garlic, finely minced

Side Dish Instructions

  1. Preheat oven to 400°F. Halve rolls lengthwise, and place on a rimmed baking sheet. Brush with oil, and sprinkle with garlic. Bake 5 to 8 minutes or until toasted.
