Warm Roast Beef Sandwiches
Garlic-Parsley French Fries

Ingredients
- 1 sweet onion, thinly sliced
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- ½ (16-oz) loaf Italian bread, split and toasted
- ¼ cup creamy horseradish sauce
- 1 cup low-sodium beef broth
- ½ lb shaved deli roast beef
- 1½ cups baby arugula
Instructions
- Cook onion in hot oil in a skillet over medium heat 3 minutes. Cover and cook 10 minutes or until onion begins to soften.
- Uncover, increase heat to medium-high, and cook 5 minutes longer, stirring often, until onion begins to brown; add vinegar. Cook 1 minute longer.
- Meanwhile, spread cut sides of bread with horseradish sauce.
- Heat broth in a saucepan over medium-high heat; add roast beef, and let stand until hot.
- Layer roast beef on bread, and top with onion and arugula. Cut into 2 servings. Serve with broth for dipping, if desired.
Side Dish Ingredients
- ¼ (32-oz) pkg frozen French fries
- 2 Tbsp butter, melted
- ½ Tbsp dried parsley
- ½ Tbsp minced garlic
Side Dish Instructions
- Bake fries according to package directions.
- Stir together melted butter, parsley, and garlic in a bowl; drizzle over fries, and toss.
