Ginger Beef and Snow Peas Noodle Bowls

Ingredients

  • 2 lb boneless chuck roast, well trimmed
  • ¾ tsp salt
  • ¾ tsp pepper
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 (1-inch) pieces ginger, peeled and thinly sliced
  • 1 cup low-sodium beef broth
  • 1 (12.8-oz) pkg soba noodles
  • 1 (8-oz) snow peas, halved diagonally
  • 2 Tbsp thinly sliced green onion
  • 1 Tbsp sesame oil

Instructions

  1. Sprinkle beef with salt and pepper; place in a 5- to 7-quart slow cooker. Add onion, garlic, ginger, and broth. Cover and cook on LOW 8 to 10 hours or until beef is tender.
  2. Cook noodles according to package directions.
  3. Combine hot noodles, snow peas, green onion, and oil; toss. Serve beef mixture over noodle mixture.
