Classic Pumpkin Bread

Ingredients

  • 2 cups all-purpose flour
  • 1½ cups whole wheat flour
  • 4 tsp pumpkin pie spice
  • 2 tsp baking soda
  • 1¾ tsp salt
  • 1 tsp baking powder
  • 1 cup packed dark brown sugar
  • 1 cup granulated sugar
  • 1 (8-oz) carton sour cream
  • ½ cup vegetable oil
  • 4 large eggs, lightly beaten
  • 1 (15-oz) can pumpkin puree

Instructions

  1. Preheat oven to 350°F. Coat two 9-x 5-inch loaf pans with cooking spray.
  2. Stir together flours, pumpkin pie spice, baking soda, salt, and baking powder in a medium-size bowl.
  3. Combine sugars, sour cream, and oil in a large bowl. Beat at medium speed with an electric mixer until blended.
  4. Add eggs, one at a time, beating well after each addition. Add pumpkin, beating until blended. Slowly add flour mixture, stirring until smooth. Spread batter in prepared pans.
  5. Bake 40 minutes or until a wooden pick inserted in center of each loaf comes out clean. Cool in pans 5 minutes. Remove from pans; cool completely on a wire rack.
  6. Slice bread, and, if desired, serve with softened cream cheese.
