Caramel Apple Crisp

Ingredients

  • 3 cups quick-cooking oats
  • 2 cups all-purpose flour
  • 1½ cups packed brown sugar
  • 1½ tsp ground cinnamon
  • 1 cup butter (2 sticks), cut into pieces
  • 4 to 5 large apples, peeled and thinly sliced
  • 1 (14-oz) pkg caramels
  • 1 (5-oz) can evaporated milk
  • 1 cup apple cider, divided

Instructions

  1. Preheat oven to 350°F. Combine oats, flour, brown sugar, and cinnamon in a bowl; cut in butter with 2 knives or a pastry blender until crumbly.
  2. Press half of mixture in a greased 13- x 9-inch baking dish. Layer with half of apples.
  3. Melt caramels and evaporated milk in a microwave-safe bowl; stir until smooth.
  4. Drizzle half of caramel mixture over apples; sprinkle with half of remaining oat mixture, pressing it into clumps with fingers.
  5. Repeat layers, and then drizzle with ½ cup cider.
  6. Bake 30 minutes; drizzle with ½ cup cider.
  7. Increase oven temperature to 375°F. Bake 15 minutes longer or until apples are tender.
