Peanut Butter Ganache Sandwich Cookies

Ingredients

  • ½ cup milk chocolate chips
  • ¼ cup heavy cream
  • ¼ cup butter, softened
  • ½ cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 Tbsp milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 12 large bakery peanut butter cookies

Instructions

  1. Place chocolate in a heatproof bowl. Bring cream to a simmer in a small saucepan over medium heat; remove from heat, and immediately pour over chocolate.
  2. Let stand 5 minutes. Stir with a rubber spatula until chocolate is completely melted and ganache is smooth.
  3. Beat butter and peanut butter at medium speed with a mixer until smooth. Add sugar, milk, vanilla, and salt. Beat until blended.
  4. Spread ganache on 6 cookies; spread frosting on 6 cookies. Sandwich cookies together to serve.
