Apple Pie Bars

Ingredients

  • 1 cup plus 5 Tbsp butter, softened and divided
  • ½ cup plus 3 Tbsp granulated sugar, divided
  • ½ cup packed brown sugar, divided
  • 2¾ cups plus 3 Tbsp all-purpose flour, divided
  • ¼ tsp salt
  • 2 lb Granny Smith apples, peeled and thinly sliced
  • 1 tsp apple pie spice, divided
  • ½ cup rolled oats

Instructions

  1. Preheat oven to 350°F. Line a 13- x 9-inch baking dish with parchment paper. Grease bottom and sides with cooking spray.
  2. Combine 1 cup butter, ½ cup granulated sugar, and ¼ cup brown sugar in a large bowl. Beat until light and fluffy, using a hand-held mixer.
  3. Add 2½ cups flour and salt, mixing until just combined. Transfer mixture to prepared baking dish, pressing dough into bottom of pan in an even layer. Bake 20 minutes.
  4. Meanwhile, toss apples, 3 Tbsp flour, 3 Tbsp granulated sugar, and ½ tsp apple pie spice in a large bowl. Spread apple mixture in an even layer over baked crust.
  5. Combine oats, ¼ cup brown sugar, ¼ cup flour, and ½ tsp apple pie spice in a large bowl; cut in 5 Tbsp butter with 2 knives or a pastry blender until crumbly.
  6. Sprinkle oat mixture over apples. Bake 50 minutes or until apples are soft and topping is golden brown.
