Cilantro-Lime Cod
Southwest Protein Veggies and Cucumbers
Ingredients
- 3 (4-oz) cod fillets
- 1½ tsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 2½ Tbsp chopped fresh cilantro
- 1½ limes, halved
Instructions
- Brush both sides of the fish with oil; sprinkle with salt and pepper. Heat a nonstick skillet over medium-high heat; cook fish 4 minutes per side or until fish flakes with a fork.
- Sprinkle with cilantro. Serve with limes.

- 1 (12.7-oz) pkg frozen southwest-style protein blend vegetables
- 2 Tbsp extra virgin olive oil, divided
- 1½ cucumbers, thinly sliced
- 1½ tsp apple cider vinegar
- ¼ tsp salt
- ¼ tsp hot sauce
Side Dish Instructions
- Microwave vegetable mixture according to package directions; place in a bowl and drizzle with 1 Tbsp oil.
- Toss cucumbers with vinegar, 1 Tbsp oil, salt, and hot sauce.
