Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 1½ tsp garlic powder, divided
  • ½ tsp salt
  • ½ cup brown sugar
  • ½ cup cold water
  • ¼ cup rice vinegar
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp cornstarch
  • 2 tsp grated ginger

Instructions

  1. Preheat oven to 425°F. Place pork on a baking sheet; sprinkle with ½ tsp garlic powder and salt. Bake 20 to 25 minutes or until a meat thermometer inserted reads 145°F. Let stand 5 minutes before slicing.
  2. Meanwhile, combine sugar, water, vinegar, soy sauce, cornstarch, and 1 tsp garlic powder in a small saucepan; cook over medium heat 4 minutes or until thickened. Remove from heat, and stir in ginger. Serve sauce with pork.

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil
  • 3 Tbsp minced garlic
  • ½ tsp salt
  • ½ tsp crushed red pepper
  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • ½ cup chopped fresh cilantro

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together broccoli, oil, garlic, salt, and red pepper on a large rimmed baking sheet; spread in a single layer. Roast 15 minutes or until browned and tender, stirring halfway through.
  2. Meanwhile, cook rice according to package directions.
