Balsamic-Garlic Beef Tips

Ingredients

  • 1¾ lb thinly sliced beef sirloin
  • 1 tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 3 bell peppers (any colors), thinly sliced
  • 1 onion, thinly sliced
  • 1 Tbsp arrowroot
  • ¼ cup balsamic vinegar
  • ¾ cup beef broth

Instructions

  1. Cook beef, salt, and pepper in 1 Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef from pot.
  2. Add 1 Tbsp oil, bell peppers, and onion to pot; cook 6 minutes or until vegetables are tender.
  3. Stir in arrowroot, vinegar, and broth; add beef, and simmer 10 to 15 minutes or until thickened.

Side Dish Ingredients

  • 1½ lb small red potatoes, halved
  • ½ cup half-and-half
  • 2 Tbsp butter
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
  2. Stir in half-and-half, butter, garlic powder, salt, and pepper. Mash with a potato masher to desired smoothness.
