Balsamic-Garlic Beef Tips
Easy Mashed PotatoesIngredients
- 1¾ lb thinly sliced beef sirloin
- 1 tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil, divided
- 4 cloves garlic, minced
- 3 bell peppers (any colors), thinly sliced
- 1 onion, thinly sliced
- 1 Tbsp arrowroot
- ¼ cup balsamic vinegar
- ¾ cup beef broth
Instructions
- Cook beef, salt, and pepper in 1 Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef from pot.
- Add 1 Tbsp oil, bell peppers, and onion to pot; cook 6 minutes or until vegetables are tender.
- Stir in arrowroot, vinegar, and broth; add beef, and simmer 10 to 15 minutes or until thickened.
Side Dish Ingredients
- 1½ lb small red potatoes, halved
- ½ cup half-and-half
- 2 Tbsp butter
- ¾ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
- Stir in half-and-half, butter, garlic powder, salt, and pepper. Mash with a potato masher to desired smoothness.
