Bacon-Mushroom Pasta

Ingredients

  • 1 (12-oz) pkg gluten-free spaghetti
  • 6 slices bacon, chopped
  • 1 onion, chopped
  • 1 (16-oz) pkg sliced mushrooms
  • 1 cup gluten-free chicken broth
  • 1 tsp Italian seasoning
  • 1 (6-oz) pkg baby spinach
  • 1 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook bacon and onion in a large nonstick skillet over medium heat 4 minutes. Add mushrooms; cook 6 minutes or until bacon is crisp and onion and mushrooms are tender.
  3. Add broth and Italian seasoning; cook 3 to 4 minutes or until thickened. Add spinach and pasta to skillet, tossing to coat and wilt spinach. Sprinkle with cheese.
