Honey Barbecue Meat Loaf

Cheddar Mashed Potatoes and Steamed Peas

Ingredients

  • 1½ lb ground beef
  • ¾ cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 5 Tbsp barbecue sauce, divided
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 350°F. Stir together beef, breadcrumbs, egg, Worcestershire, mustard, and 3 Tbsp barbecue sauce in a bowl; shape mixture into a 9- x 5-inch loaf on a rimmed baking sheet lined with foil.
  2. Stir together 2 Tbsp barbecue sauce and honey in a small bowl; spread over top of loaf.
  3. Bake 45 minutes to 1 hour or until no longer pink in center. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 2 (24-oz) pkg refrigerated mashed potatoes
  • 1 cup shredded Cheddar cheese
  • 1 (15-oz) pkg frozen green peas

Side Dish Instructions

  1. Heat potatoes according to package directions; stir in cheese.
  2. Steam peas according to package directions; season with salt and pepper, if desired.
