Ingredients

  • 4 lb boneless chuck roast, trimmed
  • 2 Tbsp vegetable oil
  • 3 jalapeño peppers, seeded and minced
  • 2 poblano peppers, seeded and chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 (12-oz) bottle lager beer
  • 2 (15.5-oz) cans no-salt-added pinto beans, drained and rinsed
  • 1 (15-oz) can tomato sauce
  • 2 Tbsp ground cumin
  • 2 Tbsp chili powder
  • 2 Tbsp unsweetened cocoa powder
  • 1 Tbsp ground ancho chile pepper
  • ½ tsp salt
  • 1 Tbsp lime juice

Instructions

  1. Cut beef into 1-inch pieces; lightly season with salt and pepper, if desired. Brown beef in hot oil, in batches, in a large Dutch oven over medium-high heat. Remove from pot; set aside.
  2. Cook peppers, onion, and garlic in hot drippings in pot over medium-high heat 5 minutes, stirring occasionally, until tender.
  3. Return beef to pot; stir in broth, beer, beans, tomato sauce, cumin, chili powder, cocoa, chile pepper, and salt.
  4. Bring to a boil, reduce heat, cover, and simmer 2 to 2½ hours, or until beef is very tender, stirring occasionally.
  5. Uncover, and simmer 15 minutes. Stir in lime juice.
