Spanish-Style Salmon

Mashed Cauliflower with Spinach

Ingredients

  • 1 lb salmon fillets
  • 1 tsp garlic salt
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 cup grape tomatoes

Instructions

  1. Preheat oven to 350°F. Rub fillets with garlic salt.
  2. Heat oil and butter in a large cast-iron or another ovenproof skillet over medium-high heat; add fillets.
  3. Cook 3 to 4 minutes per side, basting fish with butter and oil; add tomatoes to skillet. Transfer skillet to oven.
  4. Bake 5 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 1 clove garlic, halved
  • 2 Tbsp butter, cut into pieces
  • ¼ cup whipping cream
  • ¼ tsp salt
  • 1½ cups coarsely chopped spinach

Side Dish Instructions

  1. Cook cauliflower and garlic in boiling water to cover 10 minutes or until very tender; drain well. Return cauliflower and garlic to pot over low heat. Add butter, cream, and salt. Cook 1 minute; remove from heat.
  2. Mash with a potato masher until smooth. Stir in spinach.
