Honey-Lime Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • 1 Tbsp ground cumin
  • 1 Tbsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil
  • ⅓ cup honey
  • ¼ cup lime juice
  • 2 Tbsp balsamic vinegar
  • 2 cloves garlic, minced

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with cumin, chili powder, salt, and pepper.
  2. Cook chicken, in batches if necessary, in hot oil in a large nonstick skillet over medium-high heat 4 to 6 minutes per side or until done. Remove from skillet.
  3. Add honey, lime juice, vinegar, and garlic to skillet; cook, stirring constantly, 2 minutes. Return chicken to skillet, spoon sauce over chicken, and cook 1 minute or until thoroughly heated.

  • 1½ cups long-grain white rice
  • ½ cup chopped onion
  • 2 Tbsp olive oil
  • 1 (15-oz) can black beans, rinsed and drained
  • ½ tsp ground cumin
  • ¼ tsp chili powder
  • ¾ cup water
  • ½ cup chopped fresh cilantro
  • 1 Tbsp lime juice
  • ½ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook onion in hot oil in a saucepan over medium-high heat until tender. Stir in beans, cumin, chili powder, and water; cook over medium-low heat, stirring occasionally, 15 minutes.
  3. Stir cilantro, lime juice, and salt into hot cooked rice.
