Shrimp and Caesar Salad Naan Pizzas

Ingredients

  • 2 (8.8-oz) pkg whole-grain naan
  • 2 Tbsp olive oil
  • 2 cloves garlic, halved
  • 1½ cups shredded part-skim mozzarella cheese
  • 1½ lb peeled and deveined, large wild-caught raw shrimp
  • ¼ tsp dried oregano
  • 1 pint organic grape tomatoes, halved
  • 1 (7.5-oz) pkg Caesar salad kit with Greek yogurt dressing
  • ½ tsp pepper

Instructions

  1. Preheat oven to 450°F. Brush tops of naan with oil. Bake on a lightly greased large baking sheet 6 to 8 minutes or until browned.
  2. Remove naan from oven; rub with cut sides of garlic. Top with cheese and shrimp; sprinkle with oregano.
  3. Bake 6 to 8 minutes or until cheese is melted and shrimp turn pink.
  4. Meanwhile, toss together tomatoes and all salad kit ingredients except croutons. Reserve croutons for another use.
  5. Divide salad among naan; cut pizzas into wedges, and sprinkle with pepper.
