Roasted Vegetable Pasta

Ingredients

  • 2 lb butternut squash, peeled and cut into 1-inch pieces
  • 1 lb carrots, cut into 1-inch pieces
  • 2 red onions, cut into wedges
  • 10 cloves garlic
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 (12-oz) pkg broccoli florets
  • 2 tsp dry rubbed sage
  • 1 (16-oz) pkg whole wheat shell pasta
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Combine squash, carrots, onions, garlic, oil, salt, and pepper in a large greased roasting pan.
  2. Bake 30 minutes, stirring once. Add broccoli and sage; bake 10 minutes longer or until vegetables are tender.
  3. Cook pasta according to package directions; drain, reserving 2 cups pasta water.
  4. Toss together pasta, roasted vegetables, cheese, and desired amount of pasta water; serve immediately.

  • 6 oranges, peeled and sliced
  • 2 tsp ground cinnamon

Side Dish Instructions

  1. Arrange orange slices on a platter; sprinkle with cinnamon.
