Roasted Vegetable Pasta
Cinnamon Orange Slices
Ingredients
- 2 lb butternut squash, peeled and cut into 1-inch pieces
- 1 lb carrots, cut into 1-inch pieces
- 2 red onions, cut into wedges
- 10 cloves garlic
- 3 Tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 (12-oz) pkg broccoli florets
- 2 tsp dry rubbed sage
- 1 (16-oz) pkg whole wheat shell pasta
- 1 cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 425°F. Combine squash, carrots, onions, garlic, oil, salt, and pepper in a large greased roasting pan.
- Bake 30 minutes, stirring once. Add broccoli and sage; bake 10 minutes longer or until vegetables are tender.
- Cook pasta according to package directions; drain, reserving 2 cups pasta water.
- Toss together pasta, roasted vegetables, cheese, and desired amount of pasta water; serve immediately.

- 6 oranges, peeled and sliced
- 2 tsp ground cinnamon
Side Dish Instructions
- Arrange orange slices on a platter; sprinkle with cinnamon.
