Italian Turkey Sausage and Cauliflower Skillet

Ingredients
- ½ lb ground Italian turkey sausage
- ⅓ cup chopped onion
- 2 tsp olive oil
- 1 (12-oz) pkg cauliflower florets, coarsely chopped
- ½ cup low-sodium chicken broth
- 4 cups baby kale
- ¼ cup freshly shredded Parmesan cheese
- ⅛ tsp pepper
Instructions
- Cook sausage and onion in a nonstick skillet over medium heat 5 to 7 minutes or until sausage is browned and crumbly. Drain sausage, reserving 1 Tbsp drippings in skillet.
- Add cauliflower to drippings in skillet; sauté 2 minutes or until edges are browned.
- Add broth and kale to skillet; cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
- Uncover and cook over high heat until liquid is almost evaporated. Sprinkle with cheese and pepper; toss.

- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 clove garlic, minced
- ½ tsp Italian seasoning
- ⅛ tsp freshly ground pepper
- 2 oz whole wheat French bread, heated
Side Dish Instructions
- Combine oil, vinegar, garlic, Italian seasoning, and pepper in a small bowl; serve with bread for dipping.
