Italian Turkey Sausage and Cauliflower Skillet

Ingredients

  • ½ lb ground Italian turkey sausage
  • ⅓ cup chopped onion
  • 2 tsp olive oil
  • 1 (12-oz) pkg cauliflower florets, coarsely chopped
  • ½ cup low-sodium chicken broth
  • 4 cups baby kale 
  • ¼ cup freshly shredded Parmesan cheese
  • ⅛ tsp pepper

Instructions

  1. Cook sausage and onion in a nonstick skillet over medium heat 5 to 7 minutes or until sausage is browned and crumbly. Drain sausage, reserving 1 Tbsp drippings in skillet.
  2. Add cauliflower to drippings in skillet; sauté 2 minutes or until edges are browned.
  3. Add broth and kale to skillet; cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
  4. Uncover and cook over high heat until liquid is almost evaporated. Sprinkle with cheese and pepper; toss.

  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 clove garlic, minced
  • ½ tsp Italian seasoning
  • ⅛ tsp freshly ground pepper
  • 2 oz whole wheat French bread, heated

Side Dish Instructions

  1. Combine oil, vinegar, garlic, Italian seasoning, and pepper in a small bowl; serve with bread for dipping.
