Cheddar-Chicken Rice Skillet
Ingredients
- 1 (8.8-oz) pkg microwavable brown rice
- ½ onion, chopped
- 1 Tbsp olive oil
- 1 (12-oz) pkg broccoli florets
- 1½ cups shredded rotisserie chicken
- 1 (1-oz) envelope Ranch seasoning mix
- ½ cup half-and-half
- ¾ cup shredded reduced-fat Cheddar cheese
Instructions
- Microwave rice according to package directions.
- Cook onion and broccoli in hot oil in a skillet over medium-high heat 4 to 5 minutes or until tender.
- Stir in heated rice, chicken, Ranch seasoning, and half-and-half. Cook 3 to 4 minutes or until slightly thickened. Sprinkle with cheese.
