Cheddar-Chicken Rice Skillet

Ingredients

  • 1 (8.8-oz) pkg microwavable brown rice 
  • ½ onion, chopped
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg broccoli florets
  • 1½ cups shredded rotisserie chicken 
  • 1 (1-oz) envelope Ranch seasoning mix
  • ½ cup half-and-half
  • ¾ cup shredded reduced-fat Cheddar cheese

Instructions

  1. Microwave rice according to package directions.
  2. Cook onion and broccoli in hot oil in a skillet over medium-high heat 4 to 5 minutes or until tender.
  3. Stir in heated rice, chicken, Ranch seasoning, and half-and-half. Cook 3 to 4 minutes or until slightly thickened. Sprinkle with cheese.
