Bacon Meatballs with Tomato Sauce
Caesar SaladIngredients
- 1½ lb ground beef
- 6 slices bacon, cooked and crumbled
- 2 cups sliced mushrooms, finely chopped
- 1 onion, chopped
- 1 tsp garlic salt
- 2 large eggs, lightly beaten
- 2 Tbsp olive oil
- 2½ cups fire-roasted diced tomatoes
Instructions
- Combine beef, bacon, mushrooms, onion, garlic salt, and eggs; shape into 1-inch meatballs.
- Cook meatballs in hot oil in a large, deep nonstick skillet over medium heat 4 minutes or until browned and no longer pink in centers, stirring often.
- Add tomatoes to skillet; cover and simmer 10 minutes or until meatballs are no longer pink.
Side Dish Ingredients
- 6 cups chopped romaine lettuce
- 6 Tbsp creamy Caesar dressing
- 6 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Place lettuce in a large bowl; add dressing and cheese. Toss.
