Bacon Meatballs with Tomato Sauce

Ingredients

  • 1½ lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 2 cups sliced mushrooms, finely chopped
  • 1 onion, chopped
  • 1 tsp garlic salt
  • 2 large eggs, lightly beaten
  • 2 Tbsp olive oil
  • 2½ cups fire-roasted diced tomatoes

Instructions

  1. Combine beef, bacon, mushrooms, onion, garlic salt, and eggs; shape into 1-inch meatballs.
  2. Cook meatballs in hot oil in a large, deep nonstick skillet over medium heat 4 minutes or until browned and no longer pink in centers, stirring often.
  3. Add tomatoes to skillet; cover and simmer 10 minutes or until meatballs are no longer pink.

Side Dish Ingredients

  • 6 cups chopped romaine lettuce
  • 6 Tbsp creamy Caesar dressing
  • 6 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Place lettuce in a large bowl; add dressing and cheese. Toss.
