Ingredients

  • 6 (4-oz) boneless, skinless chicken breasts
  • 6 Tbsp olive oil, divided
  • 2 (12-oz) jars roasted red peppers, drained
  • ¼ cup almond butter
  • 2 Tbsp lemon juice
  • 1 tsp paprika
  • 1 (5-oz) pkg baby spinach

Instructions

  1. Sprinkle chicken with salt and pepper, if desired. Cook in 2 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until almost done, turning once.
  2. Meanwhile, process roasted peppers, 4 Tbsp oil, almond butter, lemon juice, and paprika in a blender or food processor until smooth, scraping sides as needed.
  3. Add roasted pepper puree and spinach to chicken in skillet. Cook 3 to 4 minutes or until sauce is thoroughly heated and spinach wilts.

  • 1½ cups orzo
  • ¼ cup chopped fresh basil
  • 1 Tbsp jarred minced garlic
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook orzo according to package directions; drain and toss with basil, garlic, and oil. Season with salt and pepper, if desired.
