Pulled Pork-Mashed Potato Bowls
Pear and Spring Mix Salad
Ingredients
- 2 (24-oz) pkg refrigerated mashed potatoes
- 2 (16-oz) pkg seasoned and fully cooked pulled pork with sauce
- 1 (8-oz) pkg shredded Cheddar cheese
- 6 green onions, sliced
- 1 (8-oz) carton sour cream
Instructions
- Heat potatoes according to package directions; season with salt and pepper, if desired.
- Heat pulled pork according to package directions.
- Layer potatoes, saucy pulled pork, and cheese in each bowl. Microwave each bowl just to melt cheese. Top with onions and sour cream. Season with salt and pepper, if desired.
Side Dish Ingredients
- 2 (5-oz) pkg spring mix
- 3 pears, sliced
- ½ (4-oz) pkg crumbled feta cheese
- ½ (5.5-oz) pkg maple-glazed pecans
- ⅓ cup balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
