Ingredients

  • 2 Tbsp butter
  • 1 (8-oz) pkg chopped onion
  • 2 Tbsp jarred minced garlic
  • 1 cup orzo
  • 2½ cups chicken broth
  • 1½ (5.2-oz) containers garlic and fine herbs spreadable cheese
  • 3 cups shredded rotisserie chicken
  • 1 (5-oz) pkg baby spinach

Instructions

  1. Melt butter in a Dutch oven over medium-high heat. Add onion and garlic; sauté 3 to 4 minutes. Add orzo; cook 3 minutes until orzo is toasted.
  2. Add broth; bring to a simmer. Cook, uncovered, 10 minutes, stirring often. Stir in cheese until blended. Stir in chicken.
  3. Gradually stir in spinach until wilted. Season with pepper, if desired.

Side Dish Ingredients

  • 1 (18-oz) pkg premium romaine salad
  • ½ cup balsamic vinaigrette
  • 1 (5-oz) pkg seasoned croutons

Side Dish Instructions

  1. Toss together salad and vinaigrette in a large bowl; sprinkle with croutons.
