French Baguette and Dipping Oil

Ingredients

  • ½ cup balsamic vinaigrette
  • 3 Tbsp fig preserves
  • 2 tsp chopped fresh thyme
  • 1 (10-oz) pkg spring mix
  • 2 apples, sliced
  • 1 cup seedless red grapes
  • 1 (8-oz) round Brie cheese, cut into small pieces
  • 1 cup shaved Parmesan cheese
  • 1 cup chopped walnuts
  • 25 multigrain artisan crackers, broken

Instructions

  1. Whisk together vinaigrette, preserves, and thyme in a small bowl.
  2. Combine greens, apples, grapes, both cheeses, and nuts in a large bowl. Add vinaigrette; toss. Sprinkle with crackers.

  • 1 (10-oz) French baguette
  • ⅓ cup olive oil
  • 2 Tbsp balsamic vinegar
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Wrap bread in foil. Bake 10 to 12 minutes or until thoroughly heated.
  2. Combine oil, vinegar, salt, and pepper in a small bowl; serve with warm bread for dipping.
